Tonight was a night of epic proportions. Homemade marinara sauce, hand crafted meatballs, sliced, breaded and baked chicken breasts. All of it was an incredible accomplishment of taste and talent — by my roommate Nick.
When I ventured into the meat department last Wednesday to buy chicken, I had no idea what I was going to do with it. But it’s chicken, right? I’d figure something out in time. And time certainly did reveal the answer.
I’d made a plan with my other roommate, Megan, to work together to make some sort of edible dish. Raw meat repulses me, especially chicken, so together we’d brave those delicious purple veins and giblets galore to make something fantastic. Instead, after spending four hours in Pandora watching “Avatar” (best 3-D adventure of my life), I was exhausted and not feeling up to cooking. My starving roommate, Nick, however, decided to take over.
His parents had recently been to visit and brought with them a plethora of homemade food, most importantly delicious homemade meatballs and sauce and, the piece de résistance, cannolis. With plenty of delicious food options available, Nick got to work making a slightly edited version of chicken parmesan. Minus the parmesan, plus a few meatballs.
Since I’m supposed to be learning to cook, I agreed to defrost the sauce and observe the chicken breading process. Below are photos of the block of sauce I attempted to defrost and Nick expertly preparing chicken:

When all was said and done, it was a very simple meal:
-Slice chicken
-Dip chicken into egg and milk mixture
-Rub chicken in breadcrumbs
-Throw into a pan and bake for 45 minutes at 350 degrees.
So, I suppose I really didn’t cook anything fantastic … but despite the delicious cannolis, I did make a killer (literally, you might die if you eat this) dessert.
Vanilla ice cream + crumbled donut + crumbled star crunch (Google it) + chocolate syrup. Enjoy!

Although the chicken didn’t sound that good, your other recipes sounded quite delicious and easy to make! …teach me more!
